François Ecot used to work in the New York wine world, but returned home to Burgundy to make it himself. This field blend of Gamay, Aligoté, Chardonnay, and Chasselas is cerntainly unorthodox, yet fresh, lighter-bodied, and perfect with a slight chill. Pair with crayfish in mustard sauce.

Burgundy

The range of wine styles offered in Burgundy rivals that of any other region. Aligoté

The "other" white grape of Burgundy, Aligoté plays a struggling second fiddle to the regal white grape of the region, Chardonnay. Older Aligoté vines have been known to produce wines of high quality, displaying lovely citrusy and at times nutty characteristics - but even so, the remaining plantings of the grape are fast being uprooted to make even more space for the cultivation of Chardonnay.

Chasselas

A white grape grown all over the world, including Alsace, the Loire, Germany, Austria, Hungary, and Italy. The best Chasselas wines, however, are produced in Switzerland, where the grape is called Fendant and is the most widely planted variety in the country. When made well, Chasselas is soft, welcoming and easy to drink.

Beaujolais

Beaujolais is the classic expression of the Gamay grape. These red wines (labeled simply “Beaujolais”) are approachable, grapey, and fun – ideal for low-pressure sipping. Beaujolais-Villages is a step up. Compared to basic Beaujolais, the rules for Beaujolais-Villages wines are more strict. Villages wine is produced in far smaller quantities.
