Tlamati Rooster Mole Guava Leaf Pechuga Mezcal - 2022

If you've had the good fortune of crossing paths with a bottling from this fledgling brand, you are not likely to have forgotten it despite how small and fleeting each release is. They are bottling some of the most uncompromising agave spirits out there. This special release was a collaboration with chef Jazmín Ponce and was created by taking a base of mezcal made from local Papalometl agaves and conducting a third distillation with the recipe of rooster mole and guava leaves. If you don't know what to expect or don't think that sounds particularly appetizing, get ready to have your mind blown. Only 58 bottles produced for the entire batch.
