A beguiling and complex Savagnin from two tiny plots in the lieu-dit of La Vigne aux Dames in Château-Chalon. Stéphane is a native of the region, comes from a winemaking family, and has a deep connection to this land and climate. His work as a forager, his professional wine studies, and instrinsic expertise all imbue him with great finesse and skill in both the vineyard and cellar. Partially aged sous-voile, it is topped off periodically to reign in the influence of the veil. Bright, aromatic, fruited, savory, herbaceous and medium-bodied, this dry white shows why Stéphane is known as the Druid of Paris. Pair with a shojin ryori meal.
