Pallagrello Bianco was a favored grape of the aristocracy of the Kingdom of Naples, and this indigenous variety has been championed by Paula Riccio. She took over her family's estate, and today makes fine natural wines in Campania. This dry white sees a short skin contact, lending texture and aroma more so than tannic structure. Pair with Risotto alla Pescatora.
