Whenever we are able to bring in the wines of Christophe Mignon, I have to buy a bottle! Christophe is a brilliant produce who for over 2 decades has dedicated himself to biodynamic production. Both his farming and cellar practices are attuned around the rhythm of the moon, and he refences that on the front of his label. Always a blend of two vintages, 100% Pinot Meunier, aged two years in bottle with zero dosage. Long sipping, energetic, plentiful in over-ripe yellow fruit like papaya and lemon curd. This champagne is a mastercalss in complexity and style.
