Taro Vinícola Tinto, Pablo Matallana - 2021

From the arid island of Lanzarote, Pablo Matallana aids his vines in the struggle to survive in this intense climate. Planted in clay soils with about a meter of volcanic ash above, walled holes called hoyos protect the vines. Fermented and aged in stainless steel on the lees, these are fresh, mineral, and completely unsulphured. Pair with carne de cabra.
