Falling somewhere in between a vermouth and an amari, this style of chinato from Piemonte uses Barolo, the king of Italian wine, as its base. Once the wine has been made and aged, quinine is added along with traditional herbs, botanicals, and spices such as star anise, citrus, cardamom, and more. Excellent as an after dinner digestive as well as in cocktails and especially paired with chocolates.
