Adrian Parada Arrau worked as a professional chef for many years before deciding to make his own wine. Coquus is Latin for cook, and he found his old vine plot in Guarilihue, Itata. This small vineyard of 46 year-old Cinsault vines is dry farmed, and whole cluster fermentation is used. The wine spends 10 months in stainless steel and used barrels. Pair this medium-bodied dry red with dark fruits with grilled lamb.
