Mostly composed of Chardonnay from the Elms Vineyard, with 10% from Cornish Point, the vines cover a range of altitudes and soils. Fermented and aged on the lees in French oak, of which 5% was new. Malolactic fermentation was allowed, and battonage lasted 11 months. Pair this rich, medium-bodied dry white with poached salmon in caper butter sauce.
