After a long career in wine, including being the opening sommelier at L'Arpège in Paris, one of the longest running 3 star restaurants in the world, he moved back to the ancestral family domaine and began making some of the most prized biodynamic cider on the planet.
For over two decades he has also been quietly distilling his own calvados. And while he has been waiting for it to age to his exacting standards, he has been scouring the region, and saving casks from forgotten producers to help pass on their legacy and preserve the singular liquid in their casks.
This extremely limited, improbable even, selection comes from a single cask aged at a long gone domaine by a mister Patrick Delaunay. Aged for 46yrs in a humid cellar, with zero additives or filtration ever. Bottled at a natural cask strength. this is without doubt one of the most special bottles of spirits you're bound to find.
