We often consider organics and low-fi production techniques when it comes to food or wine, but the spirits mindset somehow seems different. Enter Cazcanes, an organically grown, single plot, naturally fermented, super traditionally distilled brand. I'll also note that the distillery has its own water source and no additives. This bottling is a remarkable example of reposado tequila, with a savory hint of horseradish and mustard on the nose. The palate is clean with just a hint of vanilla from American oak. A trace of sweetness, but nothing fake. If less is more when it comes to what you want in your glass, you'd be remiss not to try this.
