Tequila may be dominated by big brands, but small, artisanal producers are becoming more prevalent. More attention is being paid to how the agave is grown and how the tequila is actually made, which is great news for us. The latest is Cazcanes, the brainchild of Colin Edwards, a former Napa winemaker who followed his passion for tequila deep into the heart of Mexico. Based on a 300-year-old indigenous recipe found in a moonshine jungle still, Cazcanes is nothing but agave and water. That's it. No additives, no herbicides, no pesticides, just a pure expression of agave. This is quickly apparent in the aromas, which are full of freshly cooked agave, lime zest, green apples, peppers. Agave takes center stage on the palate as well, but is rounded out by layers of cinnamon, chocolate, almond, black pepper, and a long earthy finish.

White tequila, an official type (tipo) for tequila bottled fresh from the still, or allowed to rest in stainless steel tanks for up to sixty days before bottling. It is never aged in wooden barrels. Also known as plata, plato, and silver tequila. Usually the most robust, strong-flavoured of the tequila types.
