Gusto Historico Tepextate de Flor 'Natalia Sanchez' Mezcal

A superlative batch of mezcal from one of the most hallowed grounds in all of Oaxaca. Known as Tia Tilde, Natalia is the matriarch of one of mezcals greatest families that includes her husband Victor Ramos and her son, Emanuel. This is one of the very first batches of hers to ever make it to the States and the first we have ever been able to get using this ultra rare technique. To make this special batch, Tia Tilde allows some of the mature plants to full flower, chopping down the massive quiotes by hand and then picking and placing the yellow flowers of the tepextate agaves in the still with the fermented pinas, similar to a pechuga method. What you get is a singular spirit, completely saturated in the glorious tropical and vernal flavors of this much beloved agave. Wow.

Flor

Flor is a protective layer of naturally occurring yeast that grows, under certain circumstances, in the barrels after fortification. Its presence (or absence) is what determines the style of a given Sherry. When it does grow, it protects the wine from oxidation while feasting on the available glycerin - the resultant Sherries are thus dry and very pale in color (called Finos or Manzanillas).
