This husband and wife team - Gautier and Sophie - carry on this family's legacy of a tradition that used to be pervasive in Burgundy, the wine maker/ distiller. Guillemot-Michel is actually the last remaining independent vestige of this rich history in the region. Pioneers in biodynamic farming and winemaking for over 30yrs, each gin is made from their own estate grown grapes, fruits and botanical. This expression features black garlic and geranium but the overall affect is one of balance with a supple texture that mixes floral and savoury notes with a juicy, piquant mouth watering finish. Bottled at natural still strength. Once a year, extremely limited release.
