100% Baga, a sparkling rose coming from the Moinho vineyard. The Baga is harvested at the end of August from the same vines that produce the red wine. After a short maceration, it is fermented in stainless steel, and then again in bottle in the Champagne method, after which it spent almost 10 years on the lees.

For years Luis Pato has been making a serious, long-aged red called Formal, so a friend joked that he should make one that was "informal". The result is this Champagne method rose sparkler in a crown cap. At first glance the fun is apparent, but the wine in anything but frivolous. This is made with 100% Baga, which undergoes a short maceration before fermentation in stainless steel. It spends almost 10 years on the lees giving a richer, textural feel to it. A serious wine that doesn't take itself too seriously, no need for a tux or ball gown.

Baga

A red grape that is mostly associated with central Portugal's Bairrada region, often made into rosé. Varietal wines made from Baga are generally dark and quite tannic: the best vintages produce truly age-worthy reds.

Portugal

The Dão and the Douro are the most important regions as far as red Portuguese table wine is concerned. Douro wines tend to be a bit fuller and fleshier than their Dão counterparts, which are generally lighter and higher in acidity. Reds from both regions are dense, rustic, and well-balanced.
