Staff Pick Notes

'Hiyaoroshi' translates to 'rich harvest,' which is a huge hint about the brewing and character of this sake. It is brewed in winter, aged through the summer to develop more of an umami flavor, and meant to enjoy in autumn. That didn't stop me from trying it out in March, however, and I'm glad I did! Hiyaoroshi has a gentle mouthfeel and a rich, savory palate of mushroom and roasted chestnuts. It is quite aromatic as well, and I got herbaceous notes as well as a slight fruitiness, reminiscent of bananas. Enjoy slightly chilled and appreciate how it opens up as this bottle reaches room temp - pair with spicy seaweed snacks from Trader Joe's!
