This Patagonian gin has a base distillate of corn distilled 5 times, with botanicals sourced mostly from across Chile. Patagonian botanicals include paramela, chaura, ñirre, calafate berry, white currants, rhubarb, green chile, pink molle, with juniper, basil, rosemary, lime, coriander, cardamom, and angelica root. Maceration and direct distillation, steam infusion, and cold distillation via rotary evaporator are all used to extract aromas, and it is proofed down with water from the nearby Universidad Glacier.

The wines out of Patagonia have historically been my avenue into experiencing the natural beauty this land has to offer. However, when we brought in several distilled spirits from Patagonia, they blew me away! The Provincia Gin in particular is the most unique and beautiful of these selections, combining the efforts of wild foragers & local farmers on the Chilean side of Patagonia with pure glacier water sourced from the local Universidad Glacier. The base spirit is corn, but it is the botanicals that steal the show, with several indigenous to the land such as paramela (an ancient medicinal plant foraged at the Magellan Strait), chaura (a flowering plant), ñirre (a deciduous tree), and calafate berry (a sweet tart berry similar to blackcurrant and blueberry). Overall, it is a perfect example of this mystical land in liquid form!
