Staff Pick Notes

An even blend of Pineau d’Aunis and Cabernet Franc, this wonderful sparkling wine is made using the méthode ancestrale. Bottled before first fermentation is complete, trapping the natural CO2 to create soft, natural bubbles. Slightly hazy, but vibrant salmon in color. The fruit profile leans tart cherry and under-ripe strawberries. The Pineau d'Aunis adds a subtle, signature hint of pepper and flinty minerality that keeps the fruit in check. It’s bone-dry, crisp, and has a zesty acidity that makes this wine so effective on the table. This was one of many bottles I shared at a peking duck feast and I can confirm, this delightful bottle of bubbles is sure to get the party started!!
