From north of Beijing, in sight of the Great Wall, this winery sought the best land and consulted with German winemakers to grow the most traditional Riesling in China. The vines are buried in winter to protect them from the cold. This dry white is steely, mineral, and with black pepper aroma. Pair with salt and pepper pork.
