Staff Pick Notes

Lambrusco is a complex category, referring both to a style of wine and a family of grape varieties native to Emilia-Romagna. Max Brondolo of Podere Sottoilnoce is one of a small group of winemakers striving to reclaim tradition and terroir in the production of these Emilia frizzante refermentati. Certified organic and practicing biodynamic, Max makes bottle-fermented wines in a pre-industrial style that take advantage of the diversity of Lambrusco varieties. “Saldalama” is his interpretation of a Lambrusco from the Modena hills, featuring about equal parts L. Grasparossa, L. del Pellegrino, L. di Sorbara, and Uva Tosca. All that said, this dry frizzante is utterly drinkable. Rustic and juicy, it shows black raspberry, cassis, wet leaves, and clove. Make like the Modenese and pair this with Prosciutto di Modena and tigelle.
