Our long awaited first ever collab with the singular Forthave Spirits. A once in a lifetime chance for us to have access to this extremely rare, wild honey made in the UNESCO Biosphere Reserve in Ethiopia's Majang Forest from the Abalo tree flower where the bees forage on wild plants free of any chemical inputs. The honey is harvested using ancient, low-tech methods . Beekeepers use tree hives and wild colonies . No industrial feeding, filtering, or pasteurizing is ever applied. The raw unprocessed honey is naturally very low yield making it even more expensive. In terms of flavor the dark, smoky, slightly salty and deeply mineral streak play off of a pinewood and rich malty edge. It is one of the most profound umami like flavors we never thought we could find in a honey and it one comparison to a standard batch of Marseille proves that it makes all the difference in the world in what you are tasting.
