Christoph Hoch hails from Hollenburg, Austria on the south side of the Danube River and is the 12th generation winemaker in his family. Inspired by the “active” chalk that is found within his vineyards that is comparable to that of the soils found in the Cote de Blancs, Hoch took it upon himself to make sparkling wines and spent time in Champagne to learn everything he could. The Kalkspitz (Chalk Acidity) is made from 35% Gruner Veltliner, 35% Zweigelt pressed white with the remainder compromised of Sauvignon Blanc, Blauer Portugeiser and Muskat Ottonel, all fermented in old barrel. Aromas of golden apple, Asian pear, white pepper and grapefruit, this pet nat is a touch off-dry while displaying balanced acidity and streaking minerality with bright flavors of lemon zest and quince.

Grüner Veltliner

Referred to by many Americans as "Gru-Ve," this white variety is nearly synonymous with Austrian wine. It's becoming wildly popular at the moment, especially compared to its obscure origins: it's known as the ultimate food wine for its great minerality and appealing freshness. The wines are consistent and eminently drinkable at the low end, and, on the premium side of things, full-bodied, long-lived, world-class whites.

Blue Portuguese

A black grape variety that is widely grown in Austria and Germany, and has nothing at all to do with Portugal. In fact, Portugal might be the only place that doesn't grow it: besides Austria and Germany, France, Romania, Hungary, Slovenia, and Croatia have all cultivated the grape at one time or another.
