Another phenomenal spirit from St. George.The Green Chile Vodka is unlike any other. Five varieties of California-grown chiles, along with lime and cilantro, are all utilized at different points of the intricate distillation process, adding up to a potent, complex spirit begging for experimentation in some fun cocktails. The crazy, complex process begins by filling a 1,500 liter still with non-GMO neutral spirit, jalapeños, and fresh lime peels. The recipe passes through a carter head layered with fresh cilantro during distillation, further infusing it. While this is happening, separately the same non-GMO base spirit is infused in individual batches with serrano, habanero, yellow, and red sweet bell peppers, after which each batch is slowly blended together with the lime/cilantro/jalapeño spirit!!! Notes include a rainbow of peppers, fresh herbs, grass, and savory spice. You have to try it to believe it. This is a completely unique and completely awesome spirit well worth the price tag.

Lance Winters is many things--master distiller, nuclear engineer, Whiskey magazine Hall of Famer, James Beard nominee-- but on his business card, his title is Evil Genius. I doubt the evil part (he's as nice as they come), but the genius part is spot on. After all, he was making pear eau de vie in the 90's before craft spirits were a thing. He's been on a creative roll ever since, with every spirit he makes superb, including this green chile vodka. Despite being infused with serrano and habanero peppers this is pleasantly devoid of any substantial heat. Instead, they lend richness and depth to the bright bell pepper notes, fresh lime and cilantro. Pepper lovers this is your siren song to take your cocktails down a peppery path.
