An ethereal rosé Champagne that's full-bodied on the palate. Aged in large foundre after the first fermentation for 10 months before bottling for the second fermentation. After 30 months on the lees, the wine was disgorged. Showy yet elegant on the palate.

I used to save opening special bottles of wine to match an occasion or celebration. While there is certainly something to be said for that, I now prefer to make drinking the wine the special occasion. That way, my special bottles get the attention and focus they deserve, and there was nothing stopping me from turning an otherwise unremarkable weekday into "The Day I Drank The Vilmart" Vilmart is a récoltant-manipulant, meaning they make wine exclusively from estate owned vines and have been around since the 1890's. This wine is elegant and refined with the Pinot Noir giving off beautiful strawberry and raspberry fruit, and florals complemented by a luxurious mousse. It has a richness level that perfect for food but not so much that you couldn't sip it on its own.
