For Chardonnay purists, there's nothing like a glass of Chablis. And within the Chablis universe, it’s hard to find a purer expression than the wines of Louis Michel & Fils, who’ve been focused exclusively on Chardonnay since 1850. The domaine, located on a 25 ha estate on the left bank of the Serein river where Cistercian monks first made wine in the 11th century, was one of the first wineries to do away with oak to preserve both the fruit and terroir. Their entry level Chablis, made from from old vines (average age is 35+ years) grown on Kimmeridgian soils with clay, silt, and marl mixed in, spends 6-10 months on the lees before light fining and filtering. The result is textbook Chablis: aromas of acacia, peach, ripe citrus, and wet stone give way to a dense, mineraly palate with a long, crisp finish. Pure bliss.
