A traditional drink from the artisans at Buil and Gine in Spain's historic Priorato region. Begun as an undertaking to sustainably preserve the authenticity of regional products, this vermouth is made with a base wine of Macabeo to which choice herbs and botanicals are infused, along with some grape spirit. Lushly textured, the profile is both bitter and sweet, fruity and nutty. This is a can't miss pairing for cheese plates, fresh seafood, olives, tapas, nuts, and more.

After spending some time in Spain, I got into ordering j u s t v e r m o u t h. Vermouth over ice, with an orange twist, maybe some seltzer too. It was summer then so it was perfect with lunch, happy hour and pre-supper (I think you get the idea). I came back to America trying some different ones. This one stood out by far. So much potency in flavor! Savory, bitter, nutty, floral, fresh, aromatic I feel I could go on. I think it's best to keep it simple. I pour it over ice and add a little seltzer. That's it. Enjoy.
