Begun as an undertaking to sustainably preserve the authenticity of regional products, this vermouth is made with a base wine of Macabeo to which choice herbs and botanicals are infused, along with some grape spirit. After spending some time in Spain, I got into ordering j u s t v e r m o u t h. Vermouth over ice, with an orange twist, maybe some seltzer too. It was summer then so it was perfect with lunch, happy hour and pre-supper (I think you get the idea). I came back to America trying some different ones. This one stood out by far. So much potency in flavor! Savory, bitter, nutty, floral, fresh, aromatic I feel I could go on. I think it's best to keep it simple. I pour it over ice and add a little seltzer. That's it. Enjoy.
