Francis Boulard et Fille, "Les Rachais", Rosé Extra Brut - 2009

Delphine Boulard is at the helm of the estate that she founded with her father in 2009. This rosé is all Pinot Noir from the Les Rachais vineyards, the family's most prized plot. The fruit macerates for about 12 hours, saignée-style, and is then pressed. It is fermented in used Burgundy barrels, and goes through malolactic fermentation. Hand disgorged in July of 2018, with 3g/L dosage. A rare non-blended rosé Champagne, pair this dry wine with grilled monkfish.

After experiencing the ability of champagnes produced through biodynamically farmed parcels, Francis Boulard knew that this was where he wanted to take the Raymond Boulard estate. Sadly, he was laughed off but would not be deterred, taking his share of acreage of vines and starting Francis Boulard et Fille with his daughter Delphine. Their Les Rachais Rosé is coming from a lieu dit spanning a mere .5 hectare, with only .1 of that dedicated to Pinot Noir. Vinified in older Burgundian barrels, the base wines go through malolactic fermentation and see little to no dosage (varies by vintage). A fresh foundation of minerality supports the wine with lush freshness, as flavors of strawberry cream, cranberry, and tangy apricot are woven into this textured sparkler, without needing intense fruit or electric acidity to express itself.
