Entirely old-vine Chardonnay grown on clay and limestone soil. These old vines give very low yields, and extremely concentrated fruit. The wine is fermented with native yeasts and aged in demi-muids for 2 years. It is topped off and sees no added SO2. Pair this special bottle with salt-baked cod and roasted root vegetables.
