Islay whiskies are not all peaty. Some of the most famous brands are without a doubt, but many other distilleries use differing levels of peat, and some use none at all. Tobermory is an example of this other side of Islay. Their single malts are distilled from un-peated malted barley and show a bright, intense, and more fruit-driven character. This exquisite bottle is made from 2004 stock that was finished in oloroso sherry casks. The result is a sensory overload of aromatics. It is wonderfully soft and warm on the palate with notes of roasted pecans, candied figs, rhubarb, toffee and honey. Sensationally addictive.

Scotch

Scotland

History:Distillation was brought to Scotland from Ireland by missionary monks in the 6th century. In 1644, the first taxes were imposed on Scottish distillers by England, with the result that most of the nation’s whisky was soon distilled illicitly. With the Parliament’s passing of the “Excise Act” in 1824, licensing fees for distilleries were much cheaper.
