Since the 16th century, País has been the most prevalent wine grape of Chile. Most of it has gone into high-volume jug wines. Leave it to this generation of natural winemakers to “rediscover” País and make wines that achieve its potential. Macatho, made up of Macarena del Rio and Thomas Parayre, began making natural wine in 2016. The wine uses País from 150-year-old vines grown on granite soils. Farming is organic and winemaking is non-intervention. The nose will open with some serious wet earth funk, but will make way to bright red berry fruit with an hour of decanting. It is light in weight and intensity, yet has a medium grip of tannins. Flavors of red berries are predominant, with hints of earth and herbs. Acidity gives the wine a very enjoyable freshness. It made a splendid match for my duck rillettes and Swiss alpine cheese.
