A dry and herbaceous skin contact white from the southwest of Slovenia, not far from the Italian border. Rebula is better known as Ribolla Gialla, and this spends 72 hours on the skins. Aged in neutral oak and stainless steel, this has medium tannins, and green apple and floral aromas. Pair with celery root and pork soup.

Orange Wine (Skin Contact)

Orange wine is made by using white wine grapes, which are pressed and left in contact with the skins, seeds, and stems for an extended period of time, similar to how red wine is made.

This prolonged maceration extracts color, tannins, and phenols, giving the wine a darker, sometimes orange color. It also produces a wine with more structure and intense flavor.

Maceration times can vary between a few hours to many months, with longer contact giving more color and extraction.


Staff Pick Notes

This wine is made from the Rebula grape (known as Ribolla Gialla in Slovenia's neighboring Italy) with 72 hours of skin contact, making it orange moreso in the added texture and complexity than in color. It had a surprising streak of minerality on both the nose and palate despite spending 8 months in neutral oak and refreshingly acidic notes of meyer lemon, baked apple, and apricot. Slovenian winemaker Matic Rodica focuses on indigenous varietals in a fresh, approachable style. His wines are practicing organic and naturally fermented. Matic, who often pours for Astor tastings, is also a professional ballroom dancer, with his labels being based off of real photographs of him dancing. Pair this belle of the ball with tilapia in chimichurri sauce.
