Within the dense forest of Gresigne, in the Gaillac AOC, third-generation grower and winemaker Jérôme Galaup works with his father on 4 parcels, totaling 9 hectares of vines. Alongside a small heard of cattle and 10 hectares of mixed farm, they have been operating under biodynamic practices for over 20 years. All of his plots have balanced, southern-facing exposure and the soil is an ideal combination of clay and limestone. Prepared in the “gaillacoise" method--an ancient method of bottling wine before fermentation ends to produce a natural sparkler--this wine is a perfect meeting of the playful qualities of a pét-nat with all the complex fruit and fermentation notes you could expect of a Champagne. Using the signature grape variety of the Galliac region, Mauzac, Jérôme has created a sparkling wine that is, in a word, unforgettable.

Mauzac

Though unknown to most US consumers, this white grape is considered an essential part of winemaking in southwest France, particularly in the regions of Gaillac and Limoux. Here, the sparkling wines (often blends of Mauzac and other white grapes) are made by the rustic méthode ancestrale; they're sometimes sweet, and always a pleasure before dinner or with shellfish.
