From the very north of Honshu, this unpasturized sake is made from a blend of Ginnosei and Miyama Nishiki rice grown by the estate. From the rice fields to the kura, the entire process is done by the same people. Dry, medium-bodied and with almond and bright koji aromas., this will pair well with kinpira and miso salmon.

If you are a fan of natural wines, you should get to know Namazake sakés. Namazakes skip the pasteurization process, which stabilizes saké the same way sulfur stabilizes wine. Although helpful to producers who aim for a consistent product, pasteurization can neutralize the pure expression of sake. Amanoto are rare sakés that are produced by the farmers that grow the rice. It is dense and generous with flavors of honeydew, cucumber, and wet rice. It finishes with a wild and funky nuttiness. The intense minerality shows like river pebbles. It can be served outside the realm of seafood. Try with an unpasteurized Brie de Meaux.

Akita

Located in the north of Honshu Island, the Akita Prefecture faces the Sea of Japan in the west and is bordered by Aomori in the north, Iwate in the east, Miyagi in the south east, and Yamagata in the south. The prefecture is famed for having the highest consumption of saké in Japan, due largely to the high proportion of quality sakés produced in the region.
