Although the Joan Franquet and The Costador winery has been at it for a short time (since 2009), he's regarded as one of Spain's top natural vignerons. Amazingly, everything has been learned on the job. He’s been able to purchase small plots on a single mountain in Catalonia. These plots bear vines that are 60-100 years old and enjoy the climate of 400-800 meter elevation. This Chenin has been soaked with the skins for 7 days, then fermented in amphora for 6 weeks. After that, it ages in used barrels on its lees for 6 months. Pretty nifty huh? The wine reveals a multitude of layers in flavors and aromas. Melons, citrus, apple pie, cinnamon, yeast, tea leaf, dried herbs were all flavors that I found. Grainy tannins add to the texture. Enjoy with porcini risotto.
