A dry sparkling cider that drinks like a wine. This is vinous on the palate, perfumed, citrus-driven and minerally. A Metodo Classico cider. After the second fermentation in bottle, the cider aged on the lees for 6 months. The palate is pristine, complex and elegant. Pair this with a plate of cheese and charcuterie.

Cider is a weird and varied category with 2 important questions that need answers: Is this Funky? No. Is this Sweet? No. With that out of the way, what more can I say? Well, this cider is delicious and has a nice crispness that pairs well with food. A bit of lee aging gives this a wonderful textural component without getting in the way of the overall light, crisp nature of the cider. This comes from a family owned Cidery up in the Alps north of Trentino. Apples and cider making were first brought to Italy by Julius Caesar from his travels to what is now Brittany in northwestern France.
