Staff Pick Notes

After establishing a few restaurants and years of being a sommelier, Kasuomi Fujimaki started The Grape Republic in 2015 with the intention of establishing a natural wine tradition in Japan. He chose to start in Nanyo where the hills of calcareous soils and large diurnal temperature shifts were ideal for growing vines. Organic farming and no additives (sulfur, yeasts, etc) are the rules that The Grape Republic adheres to. The Anfora Rosso is a light bodied juicy style red that is so appropriate as the seasons warm up. It is made with a blend of modern hybrid and traditional grapes. It’s bottled after 8 months of aging in Spanish clay amphora. Bright juicy pomegranate, lychee, and raspberry fruit mingle with herbs and clove. At 11.5% and a having soft, easy profile, it’s perfect for a long hang with friends.

Today, Cabernet Sauvignon has a...
