Bordiga Chiot Montamaro

The name is a clue to the character of this alpine amaro; in the ancient (but still spoken) Occitan language, a “chiot” describes a summer cabin refuge in a mountain meadow that faces the southern sun. Chiot is made by Bordiga, an historic distillery in Cuneo, Piemonte, in the shadow of the Alps and close to the French border. Fittingly most of the herbs and flowers that create this infusion are wild harvested in the Alps by local mountaineers and dried in the open air. Each ingredient is then macerated individually, resting in glass or stainless steel for 20-60 days, before being blended to create the final product. The full recipe is impossible to pin down, but primary botanicals include genepy, gentian, yarrow, thyme, and mint. Think floral, herbal, alpine lift balanced by gentle root bitterness. Chiot is the amaro for all occasions!
