A very slow, low cook for over 72 hours in the brick ovens, a natural fermentation with agave fibers and double distillation in stainless and copper pot stills, plus an exteneded aging process of over one year make this both a classic anejo and one that ultimately delivers a deeply flavorful experience that is more satisfy than most anejos. No doubt a big reason for that is the mastery of Chava Rosales, master distiller at this revered site. Limited production.
