An extra-dry style of vermouth based on Pinot Blanc from Mendocino, and neutral grape spirits, with added Cherokee Purple heirloom tomatoes, Early Girl tomatoes, young tomato leaves, red beets, purple carrots, and wild foraged kombu as botanicals. Earthy, vegetal, and savory, this will be delicious on the rocks, and in place of dry vermouth when cocktails need an umami lift.
