Vino Nobile di Montepulciano is an appellation in the south of Tuscany that specializes in reds made of the local Prugnolo Gentile, a.k.a. Sangiovese, the most planted grape in Italy. Wines are medium-bodied with a freshness that works wonders with food. Cantina Salcheto is a winery in the hills outside of Montepulciano with serious ambitions about sustainability. They operate their own cellar system to maximize energy conservation, compost is used to make fertilizer, and they recycle all of their waste water. All of this makes for a refined character that speaks to it's sense of place. Aromas of cooked strawberries, rosemary and cypress lead into stewed tomatoes and raspberry on the palate. Perfect with any dish involving cooked tomatoes and herbs. Try it with pappa al pomodoro.
