This small artisanal distillery in the Yarra Valley of picturesque Victoria, Australia is quickly earning a reputation as one of the top gin outfits in the world, no small feat for a category that has ballooned in the past decade. The reason for this ascent is the pristine quality and exceptional balance of their spirits. Years have been spent perfecting the process and we'd be hard pressed to figure out how these special gins could possibly be improved. Distilled in rare German CARL stills with a blend of native and foreign botanicals (dry and fresh), the Rare Dry Gin features organic citrus, cardamom, star anise, lavender root, and more. Notes include panettone, licorice, peppery spice, bright citrus, and deep woods.

This craft distilled Australian gin uses the usual suspects - juniper, coriander seed, cardamom, anjelica, star anise and cinnamon - but they've added some uniquely Aussie ingredients to the mix: lemon myrtle, Tasmanian pepper berry leaf and whole Australian oranges. The aromatics of the whole oranges support the spicier botanicals while the pepper berry leaf adds warmth and the lemon myrtle is a new take on lemon peel. The citrus notes in this gin make it perfect for cocktails. I'm currently using it in my Negronis, but also experimenting with some twists on the classics to bring in the new season. Try a gin Old Fashioned with orange bitters and a bit of honey syrup as a sweetener.
