It has been years now that the world of gin began moving beyond simply the classic London Dry style that near completely dominated the category for generations. But with all the new gins that have come out since, the ones that have made a memorable impact on our drinking preferences continue to be few and far between. With that in mind, it seems that everything this distiller creates and puts out is unexpected at first then quickly moving into the, "can't live without it," territory once we've tried it. For serious martini lovers like us this gin in particular fits the bill. The savory botanical mix with the additions of Picual, Hojiblanca and Coratina variety olive oils and olive leaves in the recipe make for a sensuous flavor you'll reach for again and again. Amidst disparate convoluted martini personal preferences, I may have made a discovery here that may just save us all. I myself, like many, enjoy a dirty martini. Though, some olive brine contains house blends that are less than desirable. I typically order a slightly dirty martini with a splash of vermouth, so the gin can peek through a bit more on the palate. I'm now thinking I could easily utilize this gin for a completely dry martini, no vermouth and no brine. This fabulous gin contains a blend of top shelf olive OILS. The gin is soft due this highly unique recipe and flavorsome, highlighting a botanical mix which will not certainly not turn your cocktail green. I love how many boxes this gin checks, Four Pillars is making nuanced gins that really do allow you to reconsider where you stand on the spectrum of 'dirtiness'. Fabulous.
