This Saint Aubin comes from grapes grown in chalky, rocky, limestone-rich soils just up the hill from Puligny and Chassagne. Fermented in oak casks (15% new). A full-bodied white wine that's delicious.The Carillon domaine dates back to the 16th century. The winemaking tradition has been passed down from father to son since 1632. The family still occupies the same site as they did then in Puligny-Montrachet. Think gougères and then bouillabaisse.
