Ridgeview Estates "Cavendish," Sparkling Wine

Ridgeview Estates "Cavendish," Sparkling Wine - NV

Item # 46893 750mL

A sparkling wine from Sussex, England. Partly an effect of global warming and an eagerness to exploit the chalky terroir of Southeast England, this charming sparkler shines next to others outside of Champagne. A delicate bead presents alongside crisp seashells on the nose and palate. Underlying pear and white raspberry dominate the rounded body. Wonderful for seafood and canapés. The richness of the palate and the good acidity will compliment fatty or oily dishes such as lamb or smoked fish. Ridgeview Estates was established in 1994. The vineyards are located in the South Downs of Sussex, part of a region that shares the same limestone ridge with Champagne.

It is a flexible, eager-to-please grape, responding well to just about anything a winemaker...
